A cut-by-cut playbook for your freezer — organized by category, with target temps, times, and tools. Tap a category to expand.

Food-safety baseline: USDA/FSIS recommends a safe minimum of 145°F / 63°C plus a 3-minute rest for beef steaks and roasts, and 160°F / 71°C for ground beef. For tenderness, several cuts below are intentionally cooked either below or far above those thresholds — for medium-rare steak texture or collagen breakdown. Use a probe thermometer.
